Dairy-free Gingersnaps

Wet Ingredients:
1 tsp vanilla
3/4 cup vegan butter
1 cup sugar
1/2 cup molasses
1 egg substitute*
Extra sugar for rolling the dough balls

Dry Ingredients:
2 cups AP flour
2 tsp baking soda
1 tsp cinnamon
1 tsp cloves
1 tsp ginger
1/4 tsp salt

Preheat oven to 350 degrees
Melt butter and mix the rest of the wet ingredients together in a bowl.
Mix dry indredients in a separate bowl and add to the wet ingredients. Mix well - may need to add a couple tbsp of flour, if the dough is still sticky. The dough should be wet but not stick to your fingers.
Once combined, roll tbsp sized dough into balls and roll in sugar.
Bake at 350 for 7 min or until golden brown.

*Note: egg substitutes - 1/2 mashed ripe banana, 1 tbsp ground flaxseed or ground chia seeds and 3 tsp water
